Alfredo Spaghetti Squash

If you have yet to try spaghetti squash, let this be your sign. Try it!! It's super nutritious, substitutes for pasta, and is fairly hands off. What's not to like?! I know, cooking something that you didn't grow up with can be a bit intimadating, so I'm walking you through this process step by step in order to jazz up your meal routine.

First, you'll buy your spaghetti squash in the produce section. Unlike most fruits and veggies, I really don't know how to make sure you've got a good one, but I've never bought one that wasn't delicious. Just check for any obvious bruising or cuts, and get a looker :P Then you'll want to cut it right in half. These suckers take A LOT of strength, so please be careful and take it slow. **YOU HAVE BEEN WARNED**

After your heavy workout, you'll want to scoop out all of the seeds from both halves. Then you'll fill a glass cooking dish with about 1 inch of water, throw those suckers in the water hollow side down, crank your over to 400F and let them go for about an hour.

Once they're about 45 minutes in, I start prepping my alfredo sauce. Bonus recipe!!

Alfredo Sauce

1 Tbsp butter

3 cloves garlic, minced

1 cup milk (I use a blend of almond milk and heavy cream)

Paremesan, to taste and texture

Salt and Pepper

Get the butter melted with your garlic, and cook until your garlic starts to get a little toasted. Add in the milk and heat through. Toss in some parmesan cheese, I start with about 4 Tbsp, and mix until melted. Add more cheese as desired and season to taste with salt and pepper. Remember that the cheese will serve to thicken the sauce (particularly as it cools).

By this time your squash is finishing up in the oven. Remove them from the glass pan and carefully drain the dish of water. Flip your squash up and scrape up the inside with a fork. The squash will naturally shredd into strings that are used as the "spaghetti." FUN!!

Split your alfredo sauce between the two squash halves, top with more parmesan and herbs before throwing it all back in your oven to broil.

What you have in about 5-10 minutes is a delicious, homemade dinner that will keep you wanting more! THIS. IS. SOOOOOO. GOOD.
